Implementing HACCP in Kansas
This class covers the Process Approach to HACCP (Hazard Analysis and Critical Control Points) and the role that each food service employee has in the HACCP requirements. The class length can be adjusted from 1.5 hours to 3 hours. The 3-hour version includes a review of Standard Operating Procedures (SOPs) and HACCP requirements by playing a game in the Jeopardy format. This class is essential for all employees (but does not meet KSDE's food safety training requirement because HACCP is a specialized topic).
